Goa’s Anjuna Beach has a new addition to its restaurant scene with the launch of ‘Jolene the Sea,’ a venture actor Amrita Arora Ladak and her husband, Shakeel Ladak. Named after the Dolly Parton classic, the restaurant blends global cuisine with a design inspired the couple’s travels.
“It had to resemble someone’s vacation home, filled with artifacts and memories that come from being well–travelled,” Amrita told Architectural Digest.
The project, developed in collaboration with hospitality veterans Gaurav Batra and Ankit Tayal and Michelin-starred chef Suvir Saran, aims to bring an international dining experience to Goa.

“Jolene the Sea was a pandemic ba, brought to life through our love for travelling,” Amrita told AD. The restaurant’s concept draws from their experiences in coastal European towns, offering a setting that feels both familiar and exclusive.

Designed Aayushi Malik, the space is set apart its 100-foot-long bamboo facade, which provides privacy while ensuring an uninterrupted 180-degree ocean view. The interiors use locally sourced materials, including natural limestone, oakwood accents, raffia, and travertine-clad pillars, balancing raw textures with refined details.
The lighting has been a focal point, with wooden bead chandeliers and branch pendant lights creating a dinct atmosphere after sunset.
“It is the quality of light that makes Jolene even more stunning,” Amrita told AD, highlighting how the natural light enhances the space during the day while the evening lighting adds warmth without overpowering the coastal ambiance.
At Jolene the Sea, the menu is designed Chef Suvir Saran, who has brought in global elements while incorporating local Goan flavours. The restaurant positions itself as a high-end yet approachable dining spot, catering to tours and residents looking for a sophicated yet relaxed atmosphere.Story continues below this ad
With its oceanfront setting, travel-inspired interiors, and carefully curated menu, Jolene the Sea is a notable addition to Goa’s dining landscape. Time shall tell if it truly emerges to be one.
