Keep your ice cream soft in the freezer with these expert-approved hacks | Food-wine News

What’s better than indulging in frozen treats during the scorching summer months to beat the sweltering afternoon heat? So, you open the fridge to scoop out your favourite flavour only to find that a driller would work better than a spoon on that frozen block! But worry not—we are here to help you with some interesting ways to make sure your ice cream stays soft for a long time.
Here’s the first trick from digital creator Shashank Alshi: Put your tub of ice cream in a Ziploc bag, submerge it in water to create a vacuum, and seal the bag. This, he said, prevents the contents inside from being affected.
“Place the ice cream tub in a zip lock bag before freezing!Submerge the zip lock bag into the water slowly, and zip it!The zip lock bag is now vacuum sealed, then store it in the freezerNo more struggling to scoop – just creamy ice cream every time!” he wrote on Instagram.

We also spoke to celebrity chef Ananya Banerjee to fact-check and find more effective ways to keep ice cream soft in the freezer.

“Transfer the ice cream to an airtight container and press a layer of plastic wrap or parchment paper directly onto the surface before sealing the lid. This prevents ice crystals from forming and keeps the texture smoother,” the chef explained.
She also suggested a few other ways:
Add a small amount of alcohol or sugar
A small amount of alcohol (like vodka or rum) or an extra tablespoon of sugar, honey, or corn syrup in homemade ice cream lowers the freezing point, keeping it softer. Be careful not to add too much alcohol, as it can prevent proper freezing.

Keep in the warmest part of the freezer
Store the ice cream at the back of the freezer, away from the door, where temperature fluctuations are minimal. Avoid placing it near the ice maker or vents, which can freeze too hard.
